I love elderflower and its fragrant sweet taste. In addition to its aroma and taste, it can have a positive effect on the immune system. It also helps to maintain optimal functioning of the upper respiratory tract.
These cute cookie bites prepared with dried elderflower allow me to enjoy its aroma and properties all year round.
They are made of three layers:
– buttery cookie with elderflower
– white chocolate cream with rose syrup
– decoration (fresh fruits, nuts or whatever else you want).
The recipe is super easy. Just make sure to make a deep enough hole before baking, because they will expand in the oven and the hole will be shallower after they are baked.
Ingredients for Elderflower-Rose Syrup Cookies:
COOKIE BASE:
- 8 tbsp dried elderflower
- 160 g all purpose flour
- 50 g unrefined cane sugar
- 1/4 tsp vanilla
- 1/4 tsp baking soda
- 80 g cold butter cubed
- 4-5 tbsp milk
CHOCOLATE CREAM:
- 50 g white chocolate
- tbsp whipping cream
- 1 tsp rose syrup
How to make Elderflower-Rose Syrup Cookies:
– Preheat the oven to 180 °C.
Cookie base
– Add elderflower, flour, sugar, vanilla and baking soda together and mix.
– Add butter and mix until you get a dry cookie mixture.
– Add milk and mix well, until a ball of dough starts to form.
– Divide the dough into 20 identical pieces. Form balls with your palms and make a deep hole in the center with your finger.
– Bake for 15 minutes or until light golden color. Then leave to cool down for at least 10 minutes.
Chocolate cream
– While the cookies are baking, put whipping cream and white chocolate in a small bowl and place it over a small saucepan of simmering water. Stir occasionally, until the cream and the chocolate form a smooth cream.
– Remove from heat and add rose syrup. Mix well and place in the fridge to cool for 10 minutes.
