These light, not very sweet cookies with a hint of lavender are delicate and delicious. The lemon and lavender provide beautiful highlights that make these cookies flavorful. Ingredients

1 cup (125 g) powdered sugar ⅔ cup (150g) butter at room temperature 1 large egg Lemon juice from 1 one lemon 2 cups (250g) all purpose flour 1 teaspoon (4g) baking powder 1 teaspoon (5g) edible dried lavender ¼ (2g) teaspoon salt

Instructions

– Beat the butter with the sugar until smooth and fluffy. Make sure the butter is at room temperature. If it is not, place it in the microwave for 20 seconds. If it is not soft, you will not be able to beat it with the sugar properly. – Add the egg and lemon juice and keep mixing. – Add flour, baking powder, salt, and lavender. – Shape the dough into a ball, wrap it in plastic foil and refrigerate it for 30 mins. – Meanwhile, preheat the oven to 180C. – Remove the dough from the refrigerator. Using a rolling pin, roll dough to a 1.5cm thickness. Cut cookies in any shape you want. Tip: In order to roll the dough easily you can place it between two baking sheets.





– Bake the cookies at 180C for 12-14 minutes or until they are golden-brown around the edges. They should remain white on top. Remove from the oven, allow them to cool on the tray for 5 minutes. Enjoy!
